This Arabica coffee is of the Catimor P3/P4 variety. The coffee cherries are hand-picked on the Banka farm by the Lahu ethnic group living in nearby villages. The cherries are then depulped to remove the skin, fruit, and mucilage. The remaining coffee (parchment) is fermented dry for 18 hours. It is then passed through narrow channels of running water to classify it by density and finally spread on drying patios for about 5-8 days.
