A washed, anaerobically fermented coffee produced by Nestor Lasso in Pitalito, Colombia, using the Typica Mejorado variety, identified by World Coffee Research as a cross between Bourbon and a native Ethiopian variety with Geisha-like refinement. Cherries are carefully selected at around 23 Brix, then taken through 48 hours of oxidation, 12 hours of anaerobic fermentation, additional oxidation with must recirculation and a submerged fermentation, finished with a hot-water thermal shock to fix the aromatics before sun and dehumidifier drying.
