This coffee is a blend of two fermentation experiments from Edwin Noreña's farm, featuring intense green apple co-ferment and a lot called Ruby, which was fermented with berries and dehydrated red fruits. The cherries were handpicked and underwent a complex fermentation process before being sun-dried.
