El Ocote is named for the magnificent conifer tree that towers over the farm of Yeltsin Sagastume, who runs seven family farms and a wet milling operation in the northeastern foothills of the Santa Bárbara Mountain. This year’s offering is a fully washed single varietal called Parainema, known for its unique cup quality.
