Arabica coffee processed naturally, from the Bourbon, Caturra, and Catimor varieties. The cherries float before undergoing anaerobic fermentation in barrels mixed with yeast until the pH is around 3.5. Then, the cherries are moved to outdoor dryers to be sun-dried until the moisture content is around 15-20%, before being transferred to a controlled temperature drying station for slow drying until the moisture reaches 10-12%.
